This is a new project based out of Chicago dedicated to Charlie Trotter. This is a cause close to our Executive Chef Mike Armstrong heart as he was inspired by Chef Trotter early on, and even had the chance to trail at his restaurant years ago. This experience helped encourage and inspire Chef Armstrong to continue his work in the culinary field. With each dish sold, Bodega Negra will donate the proceeds to The Trotter Project. This nonprofit will turn Trotter’s vacant namesake Chicago restaurant into a space to help students develop skills for jobs in the culinary and hospitality field.
